About Us

1502 is a small family business founded in Derbyshire. It all started after being bought a book of french patisserie by the renown Chef Pierre Herme. A little experimentation later and a few inspiring visits to Paris led to the production of my own mousse based layered cakes of French patisserie. My interest in chocolate decorations for these creations led to a chocolate course at the famous Callebaut workshops in Banbury which started off my interest in creating chocolates based on the chocolate ganache recipes I found in the french books. I wanted to get away from the sickly, over processed tastes of so many chocolates available and back towards the pure infusions of fruit and spices to flavour creamy chocolate ganaches. Family and friends have given such positive feedback that I founded 1502 so you can have the chance to taste these chocolate creations too.


I loved the deep flavours of the fillings with the salted caramels being particularly delicious. I slowly savoured each one and am now ordering more for family and friends.

What’s New?

We are well into autumn now so at 1502 chocolates we are concentrating on autumnal flavours. Creating layered mousse cakes with combinations of flavours that compliment and enhance each other is all part of the fun of creative cake making. We have been experimenting with sharp autumn apple mousse layered with creamy salted caramel mousse and the classic dark chocolate mousse to counterbalance the sweetness of the caramel. Add some cognac infused raisins, sultanas, mango and cranberries and it becomes a taste sensation. Looking back at all the cakes we have made over the last few years we wanted to display them in a gallery for everyone to see so now if you go to Rachel.henley.180 on instagram you can see just that. Making macarons has become more of a favourite here at 1502 and so many people have tried them and loved them that they deserved a mention here. Our macarons are always filled with ganache. From dark rich coffee ganache in our coffee macarons to white chocolate and pure pistachio paste ganache in our pistachio macarons. Our aim is to balance the sweet macaron with the dark rich ganache to avoid that overwhelming sweetness that is just too much when you use a buttercream filling. One of our aims is to create cakes for those who are gluten free or suffer from coeliac disease as I don't accept that they should be offered anything less than the best. Work in progress is to have certified gluten free wedding cakes to order so your wedding can showcase an amazing Parisian style layered mousse cake with mirror glaze and still be gluten free.
